Adventures in baking

Evan is coming home soon, so I thought I would make him some cookies as a surprise. I haven’t baked anything since right before the holidays, so it was nice to get back into the kitchen. If anyone is interested in how to make these cookies, here is the recipe.

M&M cookies

(What you’ll need)

Ingredients:
3/4 cup rolled oats
1 cup flour (I use whole wheat)
1/2 tsp baking soda
1/2 tsp salt
1/4 cup butter, softened
1/4 cup canola oil
1/3 cup sugar
1/3 cup brown sugar
1 tsp vanilla
1 egg (I use 1/4 cup egg substitute)
1 cup M&M’s (I use the dark chocolate variety)
Preparation:
Preheat your oven to 350 degress.
Grind up rolled oats in a blender then transfer to a medium bowl.
To the oats, stir in flour, baking soda, and salt.
In a separate bowl, beat butter until fluffy.
Add oil, sugar, brown sugar, egg, and vanilla to butter.
Beat until smooth.
Combine dry ingredients with wet.
Stir in M&M’s.
Drop tablespoonfuls onto cookie sheet.
Bake for 15 minutes then cool on wire rack.
